| This is a page of my favorite recipes that I have acquired over the years from various Family members, Friends, and Neighbors. Hopefully there is something here for everyone. |
| I thought that I would start of with a couple of recipes given to me by a friend of mine who is a Makah Indian, here in Washington state, up north in Neah Bay. |
| Indian Buckskin Bread 1 1/2 cups flour 2 heaping tsps. of baking powder 2 heaping TSBLS. of shortening 1 tsp. salt water as needed Sift flour and baking powder into a large bowl. Add salt and shortening. Mix up well with hands. Add water until dough is soft. Knead dough on floured cookie sheet. Shape dough into one large, long, flat loaf. Bake at 450 degrees for 20 minutes. Serve hot with butter and jam. |
| Indian Fry Bread 2 cups flour 4 tsps. baking powder 1 tsp. salt 2/3 cup warm water Combining flour, baking power and salt, add water to make the dough the consistency of bread. Tear off balls of dough. Roll out on a lightly dusted board with flour until each ball is flat and thin. Punch a hole in the center of each piece. Fry one at a time in hot fat, 2 or 3 inches deep. Drain on a towel. |
| The old saying: You can take the girl out of New England, but you can't take the New England out of the girl. New England was where I was born and raised. When I left home I took a lot with me. My New England heritage recipes are made often at our house. Try them sometime. You might just enjoy them. |
| Yankee Pot Roast With Onions 2 TBLsps bacon fat or salad oil 5-to-5 1/2-lb beef rump or round roast 1/2 cup chopped onion 1/2 cup chopped carrot 1 clove garlic, minced Water 1 can beef broth, undiluted 1 can (8 oz) tomato sauce 1/2 teaspoon salt 1/4 teaspoon pepper 1 lb. small white boiling onions peeled 2 TBLsps all-purpose flour 1 bay leaf |
| 1. In a hot bacon fat in 6-quart ovenproof Dutch oven, brown meat, turning with two wooden spoons, until well browned on all sides-- about 20 minutes in all. 2. Preheat oven to 350 degrees F. 3. Push roast to one side of pan; add chopped onion, carrot, garlic and bay leaf; saute 5 minutes. Add water to beef broth to make 1 1/2 cups; pour over meat, along with tomato sauce. Add salt and pepper. 4. Baked, covered, 1 1/2 hours, or until meat is almost fork-tender; add boiling onions. Bake 20 minutes longer, or until meat is fork-tender. Remove roast and onions to warm serving platter. 5. Strain pan liquid, discarding particles. Skim fat off liquid. In small bowl, combine flour and 1/2 cup water, stirring until smooth. 6. Return strained liquid to Dutch oven; stir in flour mixture. Bring to boiling, stirring until slightly thickened. Pass sauce with the meat. (Makes 2 2/3 to 3 cups.) This usually feeds a family of six people: 3 adult and 3 kid's portions. Good served with potatoes and carrots on the side. |
| New England Clam Chowder 3 slices bacon, coarsely chopped 1 1/2 cups finely chopped onion 2 cans(7 1/2- or 10 1/2 oz.size)minced clams 3 cups cubed peeled potato 1/2 teaspoon salt 1/4 teaspoon pepper 3 cups half and half 1. In a 5-quart Dutch oven, saute bacon until almost crisp. Add oniion; cook, stirring occasionally, about 5 minutes. 2. Drain clams, reserving clam liquid. 3. Add potato, salt, pepper and reserved clam liquid to Dutch oven. Cook over medium heat, covered, 15 minutes, or until potato cubes are fork-tender. 4. Add clams and half-and-half to Dutch oven; mix well. Heat about 3 minutes; do not boil. Makes 12 servings NOTE: One pint shucked fresh clams may be used in place of canned clams. Chop clams coarsely; use 1 bottle (8 oz.)clam juice or broth for the liquid. |
| Holiday Cranberry Bread 2 cups flour 1 cup sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon salt juice and grated rind from one orange 2 tablespoons solid shortening and boiling water enough to make 3/4 cup 1 well beaten egg 1/2 cuo chopped walnuts 1 cup cranberries- cut in half Sift together flour, sugar, baking powder, soda, and salt. Combine the juice and rind of one orange, melted shortening and enough boiling water to make 3/4 cup. Add one well-beaten egg. (I put the 2 tablespoons of shortening right in measuring cup (3/4) and pour boiling water over it to 3/4 cup-stir until some melting occurs.) Blend well with dry ingredients. Add chopped nuts and halved cranberries. Blend well. Grease and flour 1 pound coffee cans- fill 1/2 full. Allow to stand 20 minutes before baking. Bake for 50 - 60 minutes at 350 degrees F. Cool before slicing. Optional: 3 lb coffee cans |
| Clam Cakes 2 cans clams ( minced) drained 1 3/4 cups flour 1/2 tsp. salt 1 cup milk 1 egg 3 tsp baking powder 1 tablespoon oil Mix all ingredients together to form dough. Use teaspoon to form balls. Fry |
